We opened our doors on January 23rd, 2009 with a beer and a dream. Today, Lonerider has 21 employees and is one of the CED’s 25 businesses to watch. Carolina Brewing Company was the great idea of two brothers, John and Greg Shuck, and a friend, Joe Zonin. In 1992, we were living in Seattle and home brewing beer in our basement. John picked up a job working at a local brewery (Maritime Pacific) while Joe & Greg worked second shift at a credit agency and brewed beer third shift, into the wee morning hours. We got great feedback from friends and strangers (some really strange), and armed with enthusiasm and confidence, we decided that we could open our own brewery. With nothing tying us to Seattle and 10 small breweries in the Seattle area, we decided to look East for an untapped market . We wanted an area that had little competition, was a good place to live and had people and a strong economy that would be supportive of a local brewery. After traveling throughout the SE, we decided on Raleigh.

In 1993, the three of us moved from Seattle to Raleigh and started writing a business plan. While we worked in and frequented many bars and restaurants in the area, we finished writing a business plan, and pitched the idea to local banks. We also scouted warehouses and found an opportunity in Holly Springs to design the building we needed to be a brewery before it was under construction. In 1994, with financing secured from one bank and a whole bunch of friends and relatives, Carolina Brewing Company was founded and the equipment was ordered.

1995 saw the tanks arrive, test batches brewed and, on July 3, 1995, the first kegs of our tasty liquids, Carolina Pale Ale, were delivered to 42nd Street Oyster Bar in Raleigh. Later in 1995, Carolina Nut Brown Ale was introduced. We added seasonal beers in 1996, a bottling line in 1997, and the IPA in 2005.

A great moment was when we brewed our first beer over 6% abv in 2006. We bottled Old 392 Barleywine (9.3%), named in honor of the NC bill that allowed breweries to brew beers with higher alcohol content. Since then we have made a Russian Imperial Stout, Imperial India Pale Ale, and raised the ABV on our WIGGO! and Spring Bock. Our business was close to home in the surrounding 5 counties and we grew a big market share to make CPA one of the best selling beers in the Triangle.

In 2011, after 16 years as head brewer, John Shuck decided to leave CBC. Greg and Joe wanted to ensure that whoever bought his share of the business loved good beer and could work and care for the brewery the way John had. We didn’t have to look far. Mark Heath and Van Smith were long-time fans of CBC and worked as part of the volunteer bottling crew and brewed on occasion. In August 2011, they joined Joe and Greg as partners in CBC. They have added new energy, new ideas and a determination to grow the CBC brand beyond the Triangle. All it took, 3, (now 4) livers and a Dream.

History tells us that brewing beer was traditionally a woman’s job. In fact, the creation of beer is credited to women! The goddess, Ninkasi is recognized for creating the oldest beer recipe in existence, dating back some 3900 years. Until Medieval times, it was the woman’s job to brew beer for the household and laws of that time stated that the tools of brewing were solely the woman’s property. The role of men in brewing began to grow with the rise of monasteries during the Middle Ages. Until the age of “Enlightenment” and “Industrialization,” women represented seventy-eight percent of licensed brewers. From that period on the role of women in brewing declined rapidly, which the founders of Bombshell say in jest, was the downfall of the art of brewing.

Fast forward to modern times, the evolution of craft beer and the partnership of the original Bombshell Girls-Ellen Joyner, Jackie Hudspeth and Michelle Miniutti, three home brewers following their dreams. Together, they draw upon the power of their brains, beauty and beliefs that great brewing practices make for great beer and great times for all.

Aviator Brewing Company opened the hangar doors in Nov 2008. We started brewing beer in an airplane hangar at Triple W airport in Fuquay Varina, NC. We moved the airplane to one side and put in the boil kettle and mash tun! We have since moved to a larger 23,000 sq. ft. building in Fuquay Varina. We have added a hangar to our new building and made it a bar! Come on out to the brewery for a tour.

Jason Sellers is one of those people I often envy for what appears to be an uncanny ability to do anything well. Here’s a case in point: we were hanging out at the Bywater with friends a few weeks ago. The Bywater is this really cool concept bar/recreation area on the French Broad River. I call it a kind of summer camp with booze: in addition to the bar, there’s about an acre of land with picnic tables, horseshoe and cornhole games, grills, and fire pits. You can bring your own food and grill out, sit by the river, play the games. You can bring your dog. You can tube down from the Wedge, climb out of the water, and head into the Bywater — at least that’s what a whole cadre of folks had done the day we were there. I haven’t tried it yet, but I will.

There’s a bimini ring toss game as well, the goal of which is to swing a ring tied to the end of a string in such a way that it lands on a hook attached to a wall. This is not an easy task. I stood there and threw the freaking ring over and over and never got it on the hook. Jason took one practice swing, then a second, then got the ring on the hook. And then did it over and over. In exasperated and highly competitive frustration, I gave up and got another beer.

So it’s this sort of thing that seems unnerving to me, Jason’s ability to do things with such seemingly little effort. But the truth is something altogether different — and the ring toss example works to explain it. I just kept throwing the ring, thinking that if I just threw it enough times, it would land on the hook. Which it didn’t. If it had, I would have then gone back and then tried to replicate the process by which I succeeded. And that’s kinda sloppy, no?

Not Jason. Jason’s the antithesis of sloppy. Jason measures everything that he does, and he weighs all the options before acting. He got that ring on the hook on the third try not only because he considered the problem of the ring and the hook — the weight of the metal in his hand, the length of the thread, and his position relative to the wall — before he let it go, but also because he paid careful attention to what he did wrong the first and second times; he doesn’t come at things backwards, doesn’t allow himself to continue to make errors. He gets it right because he takes getting it right very seriously — perhaps more so than anyone else I know. And once he gets it right, he keeps working to get it more right. He got the ring on the hook, but maybe he could get the ring on the hook with his eyes closed. Maybe he could get the ring on the hook using his non-dominant hand.

So back to Plant: Plant is vegan. Plant is a restaurant based on an ethical principle to which Jason adheres absolutely and to which his business partners, Leslie Armstrong and Alan Berger, adhere as well. And that ethic is, in fact, the driving impulse behind the place. Jason had been a long time vegetarian when I met him in 1997; we became vegan after we moved to Massachusetts in 1999. And Jason has always been a chef at heart, has always been interested in food and in the politics behind how and what we eat. He went to culinary school at the Natural Gourmet in Manhattan in 2004, and he worked in the city at Candle 79 before moving with me — very much against his heart’s desire to stay in New York — to Asheville, where he became head chef and kitchen manager at the Laughing Seed.

Jason has been working to get it right for a long time, and he’s succeeded in ways that seem inconceivable to me. And I should know: I’ve been present for the entirety of his culinary journey and before, when he was working in his masters in Linguistics at North Carolina State University and training Kung Fu, becoming the very badass salad-eating-vegan-who-can-put-you-through-a-wall. The food that he’s making now is the food he’s always wanted to make. It’s delicious, savory, entirely plant based, and incredibly refined in both presentation and flavor combinations. One of my friends declared, after eating lunch there today, that the space in which Jason works should be declared a holy pilgrimage site.

For Jason, getting it right is still something that can be improved upon; getting it right is just another place from which to start. And I can’t wait to see what happens now.

It is therefore no surprise that Chinese cuisine is a part of main stream in Calcutta and has since spread to all parts of India.

Inchin’s is a combination of the words Indian and Chinese. This truly describes our cuisine. Since Calcutta played a very important part in the development of Chinese cuisine in India, it is here that our food is inspired from. In today’s ‘Global Cuisine’ trend ours is a fusion of many far eastern cuisines. Some of the dishes are inspired by Malaysian cooking which in turn is influenced by Indian and Chinese cooking styles. It was a natural follow through that we also introduced Thai cuisine as part of our menu in order to keep to the ‘Pan Asian” concept.
China is a large country and the various regions differ widely in climate, terrain and natural resources. These resources determine the kind of food available and as a result, influence the cooking style. We try and keep a good blend between these basic regions and therefore offer a large menu.

Some of our dishes are inspired by ‘feel good’ street food and some from the finest Chinese restaurants found in the main cities of China. Our travels to China always throw up new ideas and an opportunity to learn and pick up new cooking techniques and recipes.

Montreal-born, Executive Chef Drew Trepanier’s earliest food memory is baking apple pies with his grandmother – adding a D to the top of the pie so he knew it was his. After working in retail for several years, Trepanier realized a normal 9-5 working schedule was not for him and at age 23, enrolled in the Johnson & Whales culinary program to become a chef.

In 2009, Trepanier took a job with The Harpers Group at M5 in South Park where he worked the pizza station and wood-fired oven, eventually working his way to lead line cook. When the restaurant transitioned into Zink: American Kitchen, Trepanier was promoted to Sous Chef. In 2011, Drew left Zink to join the team at Fern, Flavors from the Garden, working his way to Sous Chef and was ultimately named Executive Chef in fall 2012.

Trepanier seeks to constantly evolve the vision of what is possible in vegetarian cooking and has been a driving force for why Fern, Flavors from the Garden is viewed both locally and nationally as one of the top restaurants in Charlotte. Sage Café in Chapel Hill, North Carolina, was established by Homa Jahannia and her son, Ramin Jahannia, in 2003. From the beginning, it has been an exclusively vegetarian café, with Homa as the cook. Friends warned Homa and Ramin that vegetarian restaurants are not at all certain to draw enough customers to support them, but Homa was convinced that if the food were really good, the décor inviting, and the service excellent, the restaurant would succeed, and she proved to be right.

The Café rapidly developed a clientele of vegetarians, and many non-vegetarians also became regular customers. Artistic imagination has created an environment of warmth, beauty, and comfort.

Homa grew up in Iran. Her cooking is based largely on Persian dishes, adapted to vegetarianism, but it is also eclectic, drawing on Italian and other cuisines. Creative use of herbs and spices, some of which are initially unfamiliar to customers, are used to flavor fresh vegetable and fruit dishes. Wherever possible, organic fruits and vegetables are bought from local sources.

For Homa, the appreciation of customers for the food at Sage Café is the most important accomplishment. Small businesses in general do not make their owners rich, and this was not Homa’s expectation in founding the café. The important achievement has been the creation of an environment of warmth and conviviality, in which good vegetarian food is served and customers are satisfied.

As chef-owner, I’m often in the kitchen wearing an apron and a baseball cap. I’ve been creating my personal cuisine in Chapel Hill-Carrboro since 1990 when two friends and I opened a take-out chicken stand called Chick-It-Out. Having grown up in Southern Arizona, that cuisine quickly took on a distinctly Southwestern flavor.

Long before locavore entered the lexicon, I was buying organic produce from farmers like the legendary Bill Dow of Chatham County. Today I still work with Bill and other growers, among them Rose & Mark Lyon, Jan Mann & Tom Jackson, Bill & Joanna Lelekacs and Lisa & David Pope. I’ve been a member of the Carolina Farm Stewardship Association for years and I also purchase produce from Eastern Carolina Organics, a farmers’ co-op. “The Egg Man,” Gerald Hall of Pleasant Garden, NC, brings me fresh brown eggs from his free-range chickens.

I use organic brown rice and black beans and locally milled organic flour. North Carolina is represented year round on my “South meets Southwest” menu in the form of sweet potatoes, grits and greens. Seasonal produce includes asparagus, strawberries, blueberries, apples, tomatoes, tomatillos, chiles, salad greens and shiitake mushrooms… the list goes on!

All desserts, including ice cream, are made in-house with fresh fruit, unsalted butter, local eggs, quality chocolate and real locally-made vanilla extract. We serve a rotating list of favorite desserts, including my grandmother’s chocolate cake and classic flan.

I believe that we all want to live well and eat well and we all can use a little help with the cooking and cleaning! That’s the niche I’ve tried to fill in the restaurant world. Because my dishes are made in-house from wholesome ingredients, you can make pleasurable and healthy choices, no matter your preferences. You’ll find extensive vegetarian and vegan selections. See V (vegetarian) and VV (vegan) after many menu entries and many vegetarian dishes can be made without dairy products. We also offer gluten-free dishes… look for GF (gluten free) or * (gluten free without bread) on the menu.

When we opened the first Doc Chey’s in 1997, our goal was simple: operate a neighborhood restaurant that serves our guests affordable, delicious, pan-Asian food.  Although we have been true to our original mission, we quickly learned that we had an even greater mission, and that was to improve the communities we serve.  We did this by becoming stakeholders in our neighborhoods and fostering good karma in our communities through various initiatives – dine-outs that support local schools and charitable organization, donations to local organizations for fundraising events, and hosting charitable events like Morningside Mile and Breakfast with Santa.  Through our efforts, we have donated over $200,000 in cash and food to local schools and non-profit organizations.  We work hard to live our values everyday – treat others as we wish to be treated and give without expecting anything in return.  We will continue to work hard every day to help make our communities better places to live – one noodle bowl at a time.

Dobra Tea

The story of Dobrá Tea begins in Prague during the last few years of Communism, where as a group of young tea lovers we began meeting to sample rare Indian, Chinese and Japanese teas smuggled into Czechoslovakia. Because of a shortage of foreign currency, high quality teas were then available exclusively to the Party, State and Military elite.

Then came the “Velvet Revolution” and the Fall of Communism in 1989. In 1992, “The Society of Tea Devotees,” was formed and the following year our first Bohemian-style tearoom, Dobrá Čajovna, opened in Prague. The Čajovna (tearoom) became a shelter, a place for safety, where like minded individuals could gather and taste the world of tea. Much success blossomed with Dobrá’s idea and the company began to spread its tea concept to many small towns throughout Czech Republic, Hungary and Poland. In 2003 Dobrá Tea opened its first U.S. tearoom in Burlington, VT and years followed to Portland, Maine and Asheville opened in 2010. We welcome you to visit our humble, Japanese style Tearoom that opened in August of 2013 in Black Mountain, NC.

Traveling to tea growing countries annually, we have gone to great distances to source all of our teas directly from their regions of origin. Our Tea menu is arranged by country, and each tea tells its own story based on our travels and experience with each variety.

The tearoom gives us the opportunity to share our passion of tea and culture with the Asheville community. You may find the tearoom is something between a church or a pub. Many see it a place where they can relax easily, engage in good conversation or meet a loved one for the first time.

When Cathy and Krista hatched the idea for their business back in 1999, they were inspired by the growing and vibrant neighborhoods of West Asheville and the need for community-oriented walkable businesses. They both share a passion for healthy eating and a commitment to providing a welcoming atmosphere where diverse families and neighbors can relax. They try to stay true to their ideals by supporting sustainable agriculture and purchasing directly from local farmers.
At the West End Bakery we strive to give back to the community by volunteering with local schools and non-profit organizations to promote healthful eating. We collaborate with organizations like Slow Food Asheville, The North Carolina Organic Bread Flour Project, and Bountiful Cities Project to try to develop sustainable food systems.
Our staff take great pride in both the quality of product and of interaction with customers. We value the hard work and creativity of all of our employees and are a Qualified Living Wage Business according to the standards of Just Economics which includes insurance for full time employees. We feel that this family atmosphere is what sets us apart as a unique community business.
At the West End Bakery and Cafe, we use 100% organic flour and the freshest ingredients available. Everything served at the West End is made from scratch, and whenever possible we use locally grown produce and organic products. Come for breakfast and stay for lunch!
